The one thing that people forget when looking for an MMA trainer is that they forget to look at it like they would for a doctor, university, dentist, contractor etc ... basically, this is a business transaction and make sure you approach it as such.
Avoid falling for things such as past performance in competition or people who they claim to have coached. Approach it objectively, you are the interviewer and interview the trainer as though you were looking to hire them for a job ... essentially that is what you are doing.
Appearance and Fitness Level
What is their appearance? Is he or she fit and well groomed? An unfit or overweight trainer is a warning sign and is the same as a chef who won't eat his or her own food. Let's face it MMA and Martial Arts are fitness based and the trainers should be fit.
An ungroomed trainer shows that similar to a business interview that this person lacks professionalism, attention to detail and respect for his or her business.
Past & Present Work Experience
First of all who is your trainer, what has he or she done recently and what is the overall vibe of the student base and school. Does the trainer work for a well established school and can this school help you reach your goals. Is there a team approach?
Where has this person worked? Why does he or she no-longer work there? Chances are if this person has jumped from school-to-school (just like in any other business) this is a red flag and the trainer you may want to steer clear of.
If he or she has a steady work history and you can check their previous employers for character and quality it is likely that you may have found your trainer.
Remember, Martial Arts is a business like any other and like any other business there are warning signs as well as positive signs in finding a trainer.
